We continue our Hawaii Food and Wine Festival journey with this dish of Monchong Dill & Tumeric Vermicelli by Chef Charles Phan of the Slanted Door in San Francisco.  This is based off an iconic Vietnamese dish called “Cha ca”.  Phan is the inventor of modern Vietnamese cuisine in America. In 2004 he won the James Beard award for Best Chef in California. He also authored “Vietnamese Home Cooking” and is owner of the Out the Door, Heaven’s Dog, Academy Cafe, and the Moss Room restaurants.
