This was another of my favorite dishes of the night.  Chef Chris Kajioka’s Kualoa Oyster with seaweed. These oysters are Hawaii grown and freshly harvested from Kualoa Ranch and were seasoned to perfection. Kajioka is the Executive Chef at the exclusive Vintage Cave on Oahu. He will shortly be leaving and opening his own restaurant CK. His cooking emphasizes the use of fresh, seasonal and local ingredients with Japanese and French influences.
