Here is the Crispy Pork Belly Mu Shu Taco with Hosui pear apple, baby fennel slaw and habanero poha-berry glaze by Scott Toner. He is the executive chef of the Modern Honolulu.  He believes in incorporating as many organic and locally sourced ingredients as possible. This dish was a fantastic combination and one of my favorite dishes of the night.
