This is the Yuzu Hamachi Carpaccio from Shokudo restaurant right near Ala Moana. This comes from the Japanese Amberjack (or yellowtail) fish which is native to the northwest Pacific Ocean from Japan to Hawaii and California. Carpaccio is the style of thingly sliced or pounded raw meat or fish commonly served as an appetizer. Yuzu is an Asian citrus fruit. When you combine all three of these you get this awesome appetizer.
