During the Chinese New Year storekeepers welcome lions to their shop for good luck. This is “Choy Cheng” (Cantonese) or “Cai Qing” (Mandarim) which means plucking the greens. The lion reaches up to grab green vegetables (mostly cabbage or lettuce. In Chinese the word for lettuce sounds almost like the word for fortune).  The lion will reach up “eat” the lettuce by shredding it. Sores also light fireworks like in the below photo and present red envelopes (lai see) containing money. This whole ritual is believe to bring good luck and fortune to the business for the upcoming new year. This is a simplified explanation if you want a more detailed one including the history behind it I recommend William Lee’s Choy Cheng page.
